These little cookie cups are made using a cake mix! So easy! They have a nice crunchy cookie cup, a smooth cream vanilla filling and a nice chocolate ganache. I found this recipe on facebook. Cups: 1 box regular size yellow or golden cake mix 1/3 cup butter softened (room temperature) 2 large eggs Filling: 1 package (3.4 ounce or 106g/four serving size) instant vanilla pudding 1/2 cup milk 1 cup heavy whipping cream Ganache: 1/4 cup semi-sweet chocolate chips 1/4 cup heaving whipping cream Mix cake mix, eggs and butter together until you get a smooth soft dough. Using a teaspoon or cookie scoop, fill up the cavities of a mini cupcake tin to about 2/3 full. Make sure the tin is well greased! You will get about 40 mini cups worth. Bake at 350F for 10-12 minutes until set and edges are light brown. Allow to cool for 5 minutes and then using a pastry tamper or the end of a wooden spoon, press down the center of each cup to make a depression that will be filled with cream. Loosen edges with a butter knife and cool completely. Mix the pudding mix with the milk and set aside (it will be thick). Whip the cream until stiff peaks form and then blend in pudding mixture. Fill the cooled cookie cups with the cream (a piping bag or ziplock food storage bag with the corner cut off works best). Heat 1/4 cup of whipping cream in the microwave for 30 seconds or so until hot. Add chocolate chips and let sit for 3-4 minutes. Stir until smooth and thick. Spoon a bit of the ganache over each cup.
