More With Mandy Presents: Realty Kitchen On this Episode of Reality Kitchen we are making a Dense Bean Salad with Anita at The Marketplace ATX. Bean Salad: 1 container of tomatoes 1 large cucumber 1 bunch of dill half bunch of parsley half bunch of cilantro (opt) 1 can of white beans 1 can of chickpeas 1-5oz of feta cheese (opt) Dressing: 1/4 cup of white vinegar 1/2 cup of olive oil lemon juice 1/4 cup greek yogurt or vegan sour cream pinch of sea salt 3 cloves of garlic Directions: Prep the vegetables Dice the tomatoes and cucumber and place them in a large bowl. Chop the parsley and dill. Add half of the herbs to the bowl. Add the beans Rinse and drain the beans well, then add them to the bowl with the vegetables. Make the dressing In a blender, combine the remaining parsley and dill, the cilantro (if using), and all dressing ingredients. Blend until smooth. Assemble the salad Pour the dressing over the bowl of vegetables and beans. Toss gently to coat everything evenly. Finish and serve Sprinkle feta on top, if using. Serve immediately or chill for later.
