Hello all and welcome back to our kitchen at Roco&Co.! Today we will be baking Old Fashioned Molasses Cookies. Yields: 36 cookies Recipe -4 ½ cup Cup4Cup Multipurpose Flour (660 grams) -2 ¼ cup White Sugar (510 grams) ¾ cup Molasses (185 grams) -1 stick + 5 tablespoons Salted Butter (6.5 ounces) -2 eggs -1 ½ tablespoon White Vinegar (20 grams) -2 teaspoon Vanilla Extract (10 grams) -2 teaspoon Ginger powder (3 grams) -1 teaspoon Cinnamon (3 grams) ½ teaspoon Nutmeg -2 teaspoon Baking Soda (11 grams) 1 ½ teaspoon Kosher Salt (8 grams), or to taste. Additional Turbinado Cane Sugar for coating. Instructions In large bowl combine butter and white sugar. Mix till light and fluffy. Pour vanilla extract and molasses into bowl. Stir thoroughly. Add eggs and mix until well combined. Stir in white vinegar. Divide flour roughly into four portions. Add first portion to wet mixture along with spices, leaveners, and salt. Mix until combined. Continue to add remaining portions of flour being sure to stir thoroughly between each addition. The dough will be quite stiff. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius) and line cookie sheets with parchment paper. Scoop dough unto cookie sheets. Placing turbinado sugar in shallow dish, begin to roll each dough ball in sugar until coated all over. (You may also use white sugar for this step). When all cookies are sugar coated, place cookie sheets into oven for approximately 15 minutes. Be sure to check on cookies as they bake. Once out of the oven allow cookies to cool, then plate.
