Mango Kesari Recipe Ingredients: ¼ cup ghee ¼ cup cashews 2 tbsp raisins (dried grapes) 1 cup mango purée ½ cup diced ripe mango 250 ml hot milk (boiling) ¾ cup semolina (rava/sooji) ½ cup sugar 3–4 drops yellow/orange food colour (optional) A pinch of salt A pinch of cardamom powder (optional) Method: 1. Heat ghee in a pan. Add cashews and fry until golden brown. Remove and set aside. 2. In the same ghee, add raisins and fry until they puff up. Remove and set aside. 3. In the same pan, add semolina and roast for a few seconds until aromatic. 4. Pour in the hot milk gradually, stirring continuously to avoid lumps. 5. Cover and cook on low heat for 3–5 minutes until the semolina is soft and cooked. 6. Add food colour (if using) and mango purée. Mix well. 7. Add sugar and stir until dissolved. 8. Cook until the mixture thickens and leaves the sides of the pan. 9. Add diced mango, fried cashews, and raisins. Mix gently. 10.
