Hello and Happy Thanksgiving my Friends, welcome to my Southern Kitchen! On the fifth episode of my Thanksgiving Series, I am making one of my favorites since my childhood, an another Southern and Soul Food classic Side Dish and staple at a Southern Thanksgiving table, Baked Macaroni and Cheese! Creamy, flavorful, and full of cheesy goodness! Everyone will love and enjoy this Mac and Cheese recipe and it is step by step. 1 (16-ounce) box elbow macaroni, uncooked 2 tablespoons unsalted butter 2 tablespoons all-purpose flour 1 cup warm evaporated milk 3 1/2 cups Colby Jack cheese, shredded and divided 1/2 cup mild cheddar cheese, shredded and divided 1 1/2 cups evaporated milk 2 extra-large eggs, slightly beaten 1/2 teaspoon kosher salt 1/2 teaspoon white or black pepper 1/2 teaspoon ground mustard 1/2 teaspoon smoked paprika Preheat Oven to 350 degrees. Grease a 9x13 inch baking dish with butter and set aside. In a medium saucepan over medium-low heat, add in the evaporated milk and heat it through (do not boil). Bring a large pot of salted water to a boil then add in the elbow macaroni. Cook the pasta according to the package directions (al dente). Drain (do not rinse the macaroni), pour into a large bowl and set aside. In a large saucepan over medium heat, add in the butter and let it melt. Add and whisk in the flour and cook for about 2 minutes until golden and to get rid of the raw flour taste. Slowly whisk in the 1 cup warm evaporated milk and cook until the sauce thickens and smooth. Remove from the heat and add and stir in the 1 cup Colby Jack cheese until the sauce is creamy and the cheese melts. Pour the cheese sauce over the cooked macaroni and toss to coat. Next add in the 1 1/2 cups evaporated milk, 2 cups Colby Jack cheese, 1/4 cup mild cheddar cheese, salt, pepper, ground mustard, and smoked paprika to the macaroni mixture and stir until well blended (taste the mixture for more seasoning to your liking). Add and stir in the eggs into the macaroni mixture until well blended. Pour the mixture into the prepared baking dish and sprinkle the top with the remaining cheeses (or add more if you like). Bake for 30 to 35 minutes until the cheeses melted. Remove from the oven and let it sit for 10 minutes before serving. Enjoy!
