Did you know that New Mexico has an official state question? You'll hear it asked at Mexican restaurants. Red or Green? It's referring to red or green chile, and if you want both, you just say, "Christmas!" In this video, I share a recipe for a delicious Shredded Beef Christmas Burrito that is smothered in both red and green New Mexico chile. Shredded Beef Christmas Burritos Shredded Beef 1 - 2 Tbsp. olive oil 1 1/2 lb. beef chuck, cut into large pieces salt pepper garlic powder 1/2 an onion, chopped 3/4 cup beef broth (or water) 2 bay leaves Season beef with salt, pepper, garlic powder and any the spices of your choice. Set Instant Pot to sear. Add oil to bottom of pan. Sear seasoned pieces of meat on both sides. Add onion and sauté. Add beef broth or water. Top with bay leaves and set Instant Pot to pressure cooker mode. Cook for 50 minutes and let pressure release naturally when done. Remove pieces of meat and shred with a fork. Place in bowl and pour a little reserved broth on top. *If using a crockpot, sear meat on stovetop first, then follow all the same steps. Let cook on Low 6-7 hours, or on High 4-5, or until fork tender. Red Chile Sauce 10-12 New Mexico red chile pods, stems and seeds removed 3 cloves garlic 1 Tbsp. Mexican oregano 1 Tbsp. cumin (optional) 1 tsp. salt Approx. 2 1/2 to 3 cups reserved chile water Soak dried chile pod in boiling hot water for approximately 10-15 minutes, until chile rehydrates and softens. Transfer chile to blender, reserving the chile water for later. Add garlic cloves, oregano, cumin, and salt to blender. Pour in enough chile water to cover just a little more than half of the chile in the blender. Purée until completely smooth. Then heat a large skillet on the stove top with a little olive oil in it. Pour the chile sauce into the pan and let it come to a boil. Reduce heat to a low simmer and let cook, while stirring occasionally approximately 15 minutes. Green Chile Sauce 2 cups Hatch green chile, roasted, peeled, & chopped 1/2 an onion, chopped 1 roma tomato, diced 2 - 3 garlic cloves, minced salt pepper 1 tsp. chicken bouillon approx. 2 cups hot water 1 - 2 Tbsp. oil 1 - 2 Tbsp. all purpose flour Heat a large skillet on stovetop with oil. Once hot, sauté onion in it. Add in flour and stir well for approximately 1 minute. (Be sure to use equal amounts of oil to flour.) Add in chopped green chile, diced tomatoes, and minced garlic. Mix to combine. Add water and all remaining seasoning. Stir and let come to a boil. The sauce will thicken as it cooks. If it's too thick, add more water. Reduce heat and let simmer 10-15 minutes. To make Shredded Beef Christmas Burritos flour tortillas shredded beef shredded cheese of your choice red chile sauce green chile sauce *You can also add rice, beans, or potatoes Heat tortillas individually on comal/skillet. Fill with shredded beef and cheese, and any other filling you choose. Fold sides in and roll. Return burrito to skillet, this time adding just a little oil to it. Place burrito seam side down and let cook until golden on both sides. Transfer burrito to a plate and pour red chile sauce over one half of the burrito. Pour green chile over the other half.
