I'm often asked what I make first when I pick up my yearly supply of Hatch green chile. In this "Cook With Me" video, I show you. I make a simple, but delicious New Mexico style Green Chile Stew. It doesn't matter if it's still hot outside, it's comfort food at its best. Read on for how it's made. For a printable copy of this recipe, visit my website at https://www.marcyinspired.com Green Chile Stew 1 - 2 pounds beef, cubed 1 - 2 Tbsp. flour (optional for thicker broth) 1 small onion, diced 3 garlic cloves, minced 2 roma tomatoes, diced 1 1/2 cups Hatch green chile (roasted, peeled & chopped) 4 large russet potatoes, peeled and cubed salt & pepper to taste 1 Tbsp. cumin (optional) 4 cups beef, chicken, or vegetable broth (or water) Heat a large saucepan on stovetop with enough cooking oil to coat the bottom of the pan. Add cubed beef and brown on all sides. Add flour and let cook a couple of minutes. Then add in diced onion, tomatoes, and green chile. Stir while letting cook a couple of minutes. Add in potatoes and seasonings. Fill pan with enough broth or water to fully cover the ingredients. Let it come to a boil. Once boiling, cover with a lid, reduce heat to low, and let it cook at a low simmer for 45 minutes, long enough for potatoes to soften and meat to become tender. Enjoy!
