Håfa adai, everyone! Today we'll be making a fiesta table must have, red rice. Many people have asked if I will be using a rice cooker, no I won't because I was taught to cook it on a stovetop. Please tell me any extras or tweaks you do to make your red rice the way you like it. INGREDIENTS • 5 cups of white rice (I prefer Calrose/medium grain) • 1 Achote packet • Half an onion chopped • Chicken bouillon • 1/4 cup oil • 5 cups of water • Garlic powder • Onion powder • Seasoning salt DIRECTIONS 1. Rinse your rice at least twice to remove excess starch and drain well. 2. Add in achote powder and mix well. 3. Add in chicken bouillon according to water ratio and season to taste. 4. Mix well and add in chopped onion. 5. Mix in 5 cups of water and 1/4 cup oil. 6. Taste water to see if adjustments are needed. Tasty water = tasty red rice. 7. Put on medium high heat and scrape bottom once it begins to boil. 8. Keep scraping until most of the liquid has been absorbed and thickened. 9. Put flame on the lowest possible and cover pot for 10 minutes. 10. Using a digging motion lift rice and flip to ensure even cooking. 11. Add more water slowly if needed before covering for another 12 - 15 minutes. 12. Repeat lifting and flipping (stirring motion while rice is cooking can make rice mushy) and add water if needed before covering for another 10 minutes. Continue until rice is fully cooked. TIPS • A wider, shallower pot helps ensure even cooking and easier stirring. • A flat spoon helps dig in and avoids smashing rice grains. • Add water slowly because longer cooking time is better than fachi (wet/mushy) rice. • DO NOT keep opening lid to check the rice.
