Preheat oven to 350°F (175°C). Grease your loaf pan — yes, even if it’s nonstick! 2. In a bowl, whisk together flour, baking powder, salt, and cinnamon. 3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in the vanilla. 4. Gradually add the dry ingredients and milk, alternating between the two. Don’t overmix — take your time! The batter should be smooth and silky. 5. Fold in the chopped apples. The batter might look a little thick — trust the process. 6. Pour into the prepared pan, pat down the apples slightly on top, and sprinkle with cinnamon sugar. 7. Bake for 45–55 minutes, or until a toothpick comes out clean. 8. Cool completely before slicing.
