Need help getting your kids to eat their veggies? Let Chef Paisley help! These are super easy, require only a few ingredients, and are a simple, yummy way to encourage kids to eat some vegetables. Recipe: Pastry rounds or pastry dough cut into circles (we use Goya empanada wrappers or pie dough) 15-20 ounces of frozen spinach (thaw and squeeze out the excess water with a paper towel) 1 cup shredded cheese 1 egg 1/2 teaspoon salt Optional: a dash of pepper, 1/2 teaspoon of dill Mix all ingredients in a medium bowl. Mold thawed tartlet dough into muffin cups. Spoon spinach mixture into each cup. Fold toward center leaving an opening in center of each cup. Bake at 400 for 12 to 16 minutes or until edges are light golden brown. Cool 5 minutes. Remove from pan and serve with marinara sauce.
