The broth is a perfect balance of nutty sesame, rich miso, and a spicy kick of chili oil—warming you up from the inside out! Topped with flavorful minced meat, a jammy soft-boiled egg, and fresh greens, every bite is an explosion of umami. How to... *Toppings* Onion: 1/4 pieceSwiss chard (Blette botte): 1 leaf Sesame oil: 1/2 tbsp Ground pork: 80g Grated ginger: 1/4 tsp Grated garlic: 1/4 tsp Gochujang: 1 tsp Soft-boiled Japanese marinated egg: 1 (optional but highly recommended; prepare in advance if possible) Sichuan pepper: As needed Chili oil: As desired *Soup* ☆ Sugar: 1/2 tsp ☆ Miso: 3/4 tbsp ☆ Doubanjiang: 1 tsp ☆ Grated ginger: 1/4 tsp ☆ Grated garlic: 1/4 tsp ☆ Ground sesame seeds: 1/2 tbsp ☆ Chicken broth powder: 1 tsp ☆ Water: 100cc Soy milk: 200cc Salt and pepper: To taste *Prepare the toppings* Step 1: Slice the Swiss chard lengthwise and cut it into appropriate-sized pieces. Step 2: Boil water with salt, blanch the Swiss chard until tender, then transfer it to cold water. Drain well. (You can also use bok choy or spinach if preferred.) Step 3: Finely chop the onion. Step 4: Grate the ginger and garlic. Step 5: Heat sesame oil in a frying pan. Add the grated ginger, garlic, and gochujang. Once fragrant, add the onion and ground pork, and sauté until fully cooked. Set aside. Step 6: If using a soft-boiled egg, cut it in half. (For a clean cut, use a taut thread.) *Prepare the soup* Step 1: In a pot, add all the ☆ ingredients and heat while stirring thoroughly. Step 2: Once well mixed and boiling, add soy milk and continue to warm without bringing it to a boil. Step 3: Taste and adjust with salt and pepper. *Boil the udon noodles* Step 1: Boil the udon according to the package instructions. Step 2: Rinse the cooked udon in cold water to remove excess starch for a chewier texture. Step 3: Either reheat the udon by adding it to the soup or pour hot water over it before serving. *Assemble in a bowl* Place the udon in a bowl and pour over the soup.
