Ingredients For the Chicken Seasoning • 1kg chicken legs (cut in half) • 1 teaspoon garlic powder • 1 teaspoon salt • 1 teaspoon sweet paprika • 1 teaspoon black pepper • ½ jumbo cube • A handful of chopped coriander leaves • 1 tablespoon lemon juice • ½ teaspoon chili powder • 2 tablespoons olive oil Instructions: 1. Wash the chicken thoroughly and pat dry. 2. In a bowl, mix all the seasoning ingredients. 3. Rub the marinade all over the chicken, ensuring it’s well coated. 4. Let it marinate for 30 minutes. For the Vermicelli • 3 tablespoons vegetable oil • 250g vermicelli Instructions: 1. Heat 3 tablespoons of oil in a pan. 2. Fry the vermicelli until dark brown. Be careful not to burn it! 3. Remove from the pan and set aside. For Sautéing the Chicken 1. In the same oil used for frying the vermicelli, fry the chicken for 7 minutes on each side until golden brown and cooked through. 2. Remove from the pan and set aside. For Sautéing the Vegetables • 1 tablespoon vegetable oil • 1 red paprika (chopped) • 1 yellow paprika (chopped) • 1 carrot (grated) • 1 onion (chopped) • 1 tablespoon garlic paste • ½ teaspoon salt • ½ teaspoon jumbo cube • ½ teaspoon chili powder • ½ teaspoon white pepper Instructions: 1. Add 1 tablespoon of oil to the same pan. 2. Fry the onion for 1 minute, then add the garlic paste and stir for 30 seconds. 3. Add the red paprika and fry for 30 seconds, then add the grated carrot and cook for another 30 seconds. 4. Add the yellow paprika, followed by all the spices, and cook for 1 more minute. 5. Remove from heat and set aside. For Cooking the Rice & Final Assembly • 250g basmati rice (washed and drained) • 1 tablespoon vegetable oil • 1 chopped onion • 1 tablespoon garlic paste • 100ml water (more if needed) Instructions: 1. Heat 1 tablespoon of oil in a large pan. 2. Fry the onion for 1 minute, then add the garlic paste and cook for 30 seconds. 3. Add the washed basmati rice and fry for 2 minutes until slightly brown. 4. Stir in the fried vermicelli, ensuring it’s evenly mixed with the rice. 5. Add 100ml of water, stir, and cook on low heat. 6. Gradually add more water (100ml at a time), making sure the rice doesn’t become soggy. 7. Once the rice is nearly done, mix in the sautéed vegetables. 8. Place the fried chicken on top, ensuring it’s covered with rice. 9. Cover and cook on low heat for 25-30 minutes, until the rice is fluffy and the chicken is tender. Final Touch & Garnish • Garnish with fresh chopped coriander before serving.
