Today I've got more stuff that I snatched from that gigantic Starward/Wayward Cask/Rolling Fork sale from last month; a few weeks ago it was Armagnacs ( • Authentic Wayward Armagnacs: Mouréou 1988,... ), and today it's some new rums including stuff from the Wisdom of Age series. But it's not the Hampdens - no no no, you're going to have to eat your meat and vegetables first. Today it's some really interesting cane juice (and honey/syrup) rums from a distillery in Paraguay that's been around for about a decade without me ever hearing about it. Two Wisdoms of Age in different casks, one unaged option named after a fox, let's go: Pampas Zorro Rum (Legado Distillery, Arroyos y Esteros, Paraguay, bottled by Rolling Fork; native yeast-fermented cane juice, double pot distilled with retort; bottled circa 2025; 60.5% ABV), 87/100 "Wisdom of Age" Legado Distillery Cane Juice Rum, Aged 22 Months in Argentinian Malbec Casks (Arroyos y Esteros, Paraguay, bottled by Rolling Fork; native yeast-fermented cane juice, double pot distilled with retort; bottled circa 2025; 60% ABV), 83+🍷/100 "Wisdom of Age" Legado Distillery Cane Juice Rum, Aged 30 Months in American Oak Ex-Bourbon Casks (Arroyos y Esteros, Paraguay, bottled by Rolling Fork; native yeast-fermented cane honey, double pot distilled with retort; bottled circa 2025; 60% ABV), 88-1=87/100 The Pampas Zorro is just a fantastic unaged rum, full stop. It's stylistically somewhere between Martinique and low-ester Jamaica, in some ways not far from cane juice Worthy Park, and if for some reason you wanted a one-and-done unaged rum for the home bar it'd be a great choice. The Malbec cask is... interesting. There's some fun decadent chocolate/honey stuff that I quite like on the front end, but it takes a somewhat astringent unripe-berry turn that I like a lot less. But you'll probably dig it if you like this kind of barrel, and it does recover a bit with water. The 30 month old cane honey bottling does not like water, losing several steps in terms of mouth presence, but otherwise it's exactly what I like to see from a bright, cane-forward bourbon cask rum: lots of florals and fruit and nuttiness and minerality. Wine cask aside, quite a good showing from Legado today, and a bit of a coup from Rolling Fork for grabbing these.
