Ingredients : 400g raw skinless boneless chicken thighs, roughly chopped Cooking spray (I use Fillipo Berro Olive Oil Spray - ½ swip for 7 sprays) 1 medium onion, diced 1 red bell peppers, thinly sliced 1 tbsp fresh oregano ( or ½ tbsp dried oregano) 3 bacon medallions, chopped 2 cloves of garlic, crushed ¼ tsp paprika (regular, smoked or sweet) 400g passata 200ml hot water Chicken stock (pot or stock cube) 200g fat free Greek yoghurt (or Quark) 1tsp garlic pepper (or mix garlic granules and black pepper) 6 lasagna sheets, dried 3 tbsp bbq sauce (3 swip total) 210g reduced fat mozzarella, grated ( 1 healthy extra per portion) Salt and Pepper, to taste Equipment : Frying Pan Oven safe dish (Amazon Associate Link : https://amzn.to/3N1mMcr ) Tin Foil Step by Step : 1) Pre-heat the oven to 180c fan (Gas Mark 6, 360F) 2) Spray a frying pan with oil and place on a medium heat - fry onions and peppers for 5 mins or until softened 3) Add chicken and bacon to the pan, increase heat to medium high, and stir fry for another 3 to 4 minutes, until the chicken starts to brown. 4) Add the garlic, paprika and oregano with extra spray of oil if needed and cook for a further minute until fragrant 5) Add the passata, the bbq sauce and water, along with the stock pot/cube, bring to a summer and cook for 20 mins, stirring occasionally to ensure doesn’t stick. Sauce should reduce by around a third. 6) Season the yoghurt with garlic pepper and salt. 7) In your lasagna dish, spoon a third of the chicken mixture, then layer on top of that around a quarter of the seasoned yoghurt, followed by some of the mozzarella, and then two lasagna sheets. Repeat twice. 8) Top with the remaining yoghurt and mozzarella, cover with foil then bake in the oven for 30 minutes. 9) Discard the foil, and bake for a further 15 minutes, then remove from oven for 5 minutes, then you can serve. Storage : This is best eaten on the day of cooking. I wouldn’t recommend freezing this as the yoghurt will likely separate when defrosted but leftovers will keep for a day in the fridge, there’s just two of us here so the extra portion from this I will be having for lunch tomorrow, I will cover it with foil and reheat on 175c in the oven until its hot all the way through, i expect for around 20 minutes, 30 at most. Microwaving will work too, i recommend covering with a damp paper towel and maybe dropping a little water in the bowl too to help prevent it dry in out. Whatever you do to reheat, just make sure it reaches at least 165c internally using a food thermometer.
