Don't worry about removing the skin. A lot of flavor as well as antioxidants are in them! 3 inch grated orange peel ¼ tsp nutmeg 1 cinnamon stick 1/2 cup Apple Juice 1 cup of Sugar Melt the butter and wait until it just begins to stop frothing. Add your grated frozen ginger along with the orange peel and saute for about a minute. Add your cranberries, nutmeg, cinnamon, apple juice and sugar (usually I like to add the sugar about half way of cooking time.) and let simmer for about half an hour. I sometimes smash a few of the cranberries with the back of my wooden spoon until thick and creamy:) Southern Cornbread (for dressing) 1 cup of yellow cornmeal 1 cup of flour (we use King Arthur's Gluten Free Flour) 1/2 cup of canned green chilies 1/2 cup of canned creamed style corn ( I didn't include this part in the video, so sorry) 2tsp baking powder 1 tsp baking soda 1 tsp salt 1 cup of full fat or low fat plain yogurt 2 large eggs 1/4 melted butter, cooled Preheat oven to 400. Whisk cornmeal and next 5 ingredients in bowl. Wisk buttermilk, eggs and butter in another bowl to blend. Add egg mixture to dry ingredients . Mix in chiles and creamed corn. Bake in cast iron skillet for about 25-30 minutes or until an inserted toothpick comes out with just a few crumbs attached. Southern Cornbread Dressing: I'm currently in the process of getting our family's old southern recipe for this, so I hope to post it soon! New videos are posted every Friday!
