Cloth Banding a wheel of Cheddar

Cloth banding Cheddar is the traditional method of maturing Cheddar Cheese and is still used today. It was a method of keeping the cheese from going mouldy during aging before the introduction of waxing cheese by the Dutch. Some say it enhances the final flavour of the cheese. In this video I used Coconut oil instead of the traditional Lard. I find it works just as well and I have an abundance of it for our soap making.
