Chicken and Dumplings PART 1 - Cooking Chicken and Preparing Broth 2.5-3lb whole young chicken 1 medium onion roughly chopped 2 ribs of celery cut into large chunks 8 cups water (or enough to cover chicken in pot by about an inch) 2 tsp salt ¾ tsp black pepper 1.5 tsp garlic powder Place chicken, onion, and celery into a large stock pot. Cover with water and season with the seasonings listed above. Bring to a boil over medium heat and cook until the chicken is done and falling off the bones. I let mine go for over an hour usually. Remove chicken from broth and place on a plate to cool enough to debone. Once cool, remove chicken meat from bones and set aside to add back to the pot later. Remove pot of broth from heat and set aside PART 2 - Dumplings Put 2 cups ALL PURPOSE FLOUR in a mixing bowl. Add 1 heaping Tbsp of solid shortening (Crisco) and blend into the flour until it resembles pea sized pieces with a fork or pastry blender. Add ⅔ cup of cold 2% milk by folding in with a spoon until all the flour incorporates to form a lump of dough (The type of milk you use will determine how much you need - thicker milk will require more, thinner milk will require less) Turn out the dough onto a floured surface and roll into a large, VERY THIN rectangle with a rolling pin BE SURE TO FLOUR SURFACE WELL OR IT WILL STICK Use a knife to cut into rectangular strips PART 3 - Making the Homemade Cream of Chicken Add 2 tbsp butter to a saute pan set to medium heat. Once butter is bubbly, whisk in 2 tbsp of ALL PURPOSE FLOUR and ½ tsp black pepper Once all the flour is combined into the butter add 2 cups of chicken broth WHISK constantly because it will thicken quickly. Let mixture cook on medium heat for about 6-8 minutes or until it will coat the back of a spoon Take off heat when mixture thickens and set aside PART 4 - Putting it All Together Return pot with stock back to the stove and return to a slow boil. Add dumplings gently but DO NOT STIR THEM - use a spoon to lightly dunk them into the boiling water, but don't rough them up. Once all dumplings are in pot, place a lid on the pot and cook for about 10 minutes Remove lid and add the cream of chicken soup Add deboned chicken to dumplings Let simmer on medium-low heat for 20-30 minutes.
