No-knead Bread The Most Delicious Persian Bread, Barbari Ingredients for Poolish: 150 gr Flour 150 ml water 2.5 gr Fresh yeast Ingredients for Main dough: 350 gr Flour (It will be 500 gr in total) 225 gr lukewarm water(75% Hydration) 6 gr fresh yeast (total will be 8.5 gr) 10 gr / 2 tsp salt 1 tbsp sesame 1 tbsp nigella Barbari is an absolute favourite Iranian breads. It’s so delicious and easy to make it. For Poolish the night before mix 150 gr flour, 150 gr water and 2.5 yeast together. Set aside for about 30 minutes and then pop it in the fridge overnight. Main dough: Next day dissolve yeast with water. Then add poolish and mix it up. Add flour and salt. Mix it up until there is no dry flour left. Cover and let it rest for 30 minutes. After that do 1st fold and slap. The same as me in video. In 2nd round I did coil. Fold or Coil... Just do whatever works best for you! Honestly, I'm comfortable with both! But I preferred do Coil after first Fold & Slap! Do the same as me, as you see in video. After the 3rd coil, I transferred the dough to a rectangular dish for proofing in the fridge overnight! As you can see in video, my dough was tearing when I tried to transfer it to a new dish. So, to fix that, I let it rest for another 30 minutes and gave it one more gentle coil. Then popped it in the fridge overnight. Sorry, I forgot to record this step. The next day, put the dough on baking sheet and spraying some water on the dough and your hands. Do the same as Me in video. With both your hands, dip your fingers until you feel the tray and make a straight line. After that again spraying some water to make dough more wet and sticky. Sprinkle sesame and nigella on top of the dough. Cover it with another baking pan and bake in preheated oven at 450 F / 230 C for about 20 minutes. After 20 minutes remove the lid and bake for another 15-20 minutes or until nice and golden. Enjoy I hope you enjoyed this video.
