Ingredients: • 1 egg • 90g flour • 100g brown sugar • 120g pumpkin purée • 50g vegetable oil • 1 tsp cinnamon • 2 tbsp cocoa powder • ¼ tsp vanilla • ⅛ tsp salt • 1 tsp baking powder • ¼ tsp baking soda • 60g chocolate chips • 4 Oreo cookies (crushed) For the Cream Cheese Frosting: • 80g cream cheese • 25g powdered sugar • 25g butter • A few drops of orange food coloring Instructions: 1. Beat together the brown sugar, vanilla, and egg until well combined. 2. Add the pumpkin purée, chocolate chips, and oil, then mix again. 3. Sift together the flour, baking powder, baking soda, salt, cinnamon, and cocoa powder. 4. Fold the dry ingredients into the wet mixture until smooth and well combined. 5. Fill cupcake liners about two-thirds full. 6. Bake in a preheated oven at 175°C (347°F) for about 20 minutes or until fully baked. 7. Remove from the oven and let the cupcakes cool completely before decorating. For the Cream Cheese Frosting: 1. Beat the butter, cream cheese, and powdered sugar together until smooth and fluffy. 2. Add the orange food coloring and mix again. 3. Pipe the frosting onto the cooled cupcakes and decorate as desired.
