The Ultimate Mutton Paya Curry | Secret Flour Technique for Thick Gravy! Looking for the most authentic and flavorful Mutton Paya recipe? In this video, we share a special method from a close family friend that results in incredibly tender meat and a velvety, rich gravy. The secret lies in the custom-ground masala and a professional "flour-paste" trick that ensures the perfect consistency every time! 🛒 INGREDIENTS For the Pressure Cooker: Mutton Paya (Trotters) Onion (sliced) Ginger-Garlic Paste Spices: Turmeric, Salt, Red Chili Powder Whole Spices: Black pepper, Cloves, Bay leaf, Mace, Star anise, Shahi jeera, Cardamom Oil & Hot Water For the Homemade Paya Masala: Fenugreek seeds (Methi) Coriander seeds Poppy seeds (Khus Khus) Cardamom, Black pepper, Cloves, Cumin seeds, Cinnamon For the Paste & Gravy: Oil & Mustard Oil Onions (for frying) Curd (Yogurt) Fresh Coriander & Green Chilies Ghee & Lemon juice The Secret Thickener: 4 tbsp Wheat Flour (Atta) 1 tbsp Gram Flour (Besan) Note: Must use Room Temperature water (Not warm!) 👨🍳 METHOD Step 1: Pressure Cooking In a pressure cooker, add mutton paya, onions, ginger-garlic paste, oil, and all whole spices (shahi jeera, mace, etc.). Add red chili powder and hot water. Cook for 9 to 10 whistles until the paya is tender. Step 2: Dry Roast Masala In a pan, dry roast fenugreek, coriander seeds, poppy seeds, cardamom, black pepper, cloves, cumin, and cinnamon. Cool and grind into a fine powder. Step 3 & 4: The Green Onion Paste Fry sliced onions until golden brown. In a blender, combine the fried onions, fresh coriander leaves, green chilies, and curd. Blend into a smooth paste. Step 5: The Secret Flour Tip Roast wheat flour and gram flour in a pan until fragrant. Remove from heat and mix with plain water to make a smooth paste. Tip: Do not use warm water to avoid lumps! Step 6: Bringing it All Together Heat mustard oil in a kadai. Add the onion-curd paste and ginger-garlic paste. Saute well. Add your homemade paya masala and little water. Pour in the flour mixture and saute to cook out the raw flour taste. Add the cooked paya (from the pressure cooker) and extra hot water. Season with salt. Simmer with more red chili powder, black pepper, and extra homemade masala. Finish with a squeeze of lemon, a dollop of ghee, and a garnish of mint, coriander, and fried onions.
