How to make Matcha Pandesal with Cream Cheese Filling ✅Ingredients: 2 ¼ teaspoon active dry yeast ¼ cup warm water (105-115F) ¾ cup sugar, less 1 tablespoon for proofing 1 cup milk, ½ cup separated 2 tablespoons matcha powder 2 eggs, lightly beaten 2 oz softened butter 1 teaspoon salt 4 ¼ cups all-purpose flour, 2 cups separated ½ cup bread crumbs For the cream cheese filling: 4 tablespoons hot water 3 teaspoons matcha powder 1 block (250G) cream cheese, softened 1 ½ cups powdered sugar ✅Instructions: Using the stand mixer bowl, combine yeast, warm water, and 1 tablespoon sugar. Stir to combine and let sit for 5 minutes until frothy. In a small bowl, add ½ cup hot milk and 2 tablespoons matcha powder. Whisk until the matcha powder is dissolved. Allow it to warm (105-115F). Once the yeast mixture is frothy, add ½ cup warm milk, sugar, beaten eggs, softened butter, matcha mixture, and salt. Stir to combine. Add 2 ¼ cups all-purpose flour and, with the dough hook attachment, mix on low speed until the flour is moistened. Increase speed until fully incorporated. Gradually add 2 cups of flour (½ cup at a time). Keep mixing until the dough starts to gather in the center (add ½ cup of flour if the dough is too wet). On a lightly greased work surface, knead the dough until smooth and elastic. Do the window pane test. Place the kneaded dough in a lightly oiled bowl, cover, and allow to rise for 1 to 1.5 hours. Meanwhile, prepare the cream cheese filling. In a small bowl, add 4 teaspoons of hot water and 3 teaspoons of matcha powder. Whisk until dissolved and set aside to cool. In a bowl, add softened cream cheese and beat until smooth. Add matcha mixture and powdered sugar. Beat at low speed until combined, then increase the speed to smooth the mixture. Refrigerate until ready to use. Once the dough has risen, gently deflate it by pressing down with your hand. Shape into a log and divide into 24 pieces. Take 1 portion, flatten it with your palms, scoop about 1 tablespoon of cream cheese filling, and place it in the center. Fold edges and press to seal. Shape into a smooth ball and roll in bread crumbs until fully covered. Repeat the same with the remaining dough and filling. Arrange the filled dough on a parchment-lined baking sheet and cover it. Allow to rise for about 1 hour. Bake in a preheated 350°F (180 °C) oven for 18-20 minutes. Remove from the oven. Serve and enjoy! Thanks for watching!
