Boil potatoes in salted water until tender (about 15 minutes). 2. Drain and mash with butter, milk, salt, and pepper. 3. Set aside. ⸻ 🍖 Ground Beef Filling + Gravy Ingredients: • 1 lb ground beef • 1 small onion, diced • 2 garlic cloves, minced • 1 cup frozen mixed vegetables (peas, carrots, corn) • 1 tbsp flour • 1 tbsp tomato paste • 2 tbsp Worcestershire sauce • ¾ cup hot water • ½ tsp salt (adjust to taste) • Black pepper to taste • 1 tsp dried thyme or Italian seasoning (optional) • Olive oil for cooking ⸻ Instructions: 1. Cook the beef: Heat a drizzle of olive oil over medium heat. Add onion and sauté until softened. Add garlic and cook for 1 minute. Add the ground beef and cook until browned. Drain any excess fat if needed. 2. Add flavor: Stir in the tomato paste and 2 tbsp Worcestershire sauce. Cook for 1 minute. 3. Make the gravy: • Sprinkle the flour over the beef and stir for 1 minute. • Slowly add the hot water, stirring constantly. • Season with salt, pepper, and thyme (if using). • Simmer for 5–7 minutes, until the mixture thickens into a rich, glossy gravy. 4. Add the vegetables: Stir in the mixed veggies and cook for 2–3 more minutes. ⸻ 🧀 Assemble & Bake 1. Spread the beef and gravy mixture evenly in a baking dish. 2. Spoon the mashed potatoes over the top and spread evenly. 3. (Optional: sprinkle cheese on top for a golden crust.) 4. Bake at 400°F (200°C) for 20–25 minutes, until bubbly and lightly browned. 5. Let it rest for 5 minutes before serving. ______ Butter Brown Chocolate Chip Cookie: Ingredients- 3/4 cup butter 3/4 brown sugar - 160g 1/4 white sugar - 50g (if you want a fluffier, softer cookie- do all brown sugar) 2 tsp vanilla bean paste (or extract but highly recommend using paste) 1 egg + 1 egg yolk 1 3/4 cup flour - 210g 1 tsp baking powder 1/2 tsp baking soda 1 tsp corn starch (optional if want a thicker cookie) pinch of salt if using unsalted butter 1 - 1 1/2 cup chocolate chips Directions: Brown the butter - heat over medium heat until foamy on top and turns to a dark golden brown/smells nutty Take off heat and cool completely, 30min to an hour Once cooled, mix in sugar till smooth Add in vanilla, then eggs Measure out dry ingredients in a separate bowl, gradually mix in till just combined (do not over mix!) Roll into balls and refrigerate for at least an hour to 2 hours, best overnight Preheat oven to 350 and bake for 10-12 minutes, take out when edges start to brown, do not over bake, they cook as they set Top with flaky sea salt
