In a large bowl, mix the flour, salt, and sugar. 2. Add the cold butter and cut it into the flour using a pastry cutter, fork, or your fingertips until the mixture looks like coarse crumbs (pea-sized bits). 3. Gradually add ice water, 1 tbsp at a time, mixing gently with a fork until the dough starts to come together. 4. Divide into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour. ⸻ 🍎 Apple Filling Ingredients: • 6–7 medium apples (Granny Smith, Honeycrisp, or Fuji – mix for best flavor) - I used Gala and it worked just fine! • ½ cup (100g) sugar • ¼ cup (50g) brown sugar • 2 tbsp all-purpose flour • 1 tsp ground cinnamon • ¼ tsp ground nutmeg (optional) • 1 tbsp lemon juice • 1 tsp vanilla extract • 2 tbsp unsalted butter (for dotting) Instructions: 1. Peel, core, and slice the apples. 2. In a large bowl, toss apples with both sugars, flour, cinnamon, nutmeg, lemon juice, and vanilla. 3. Set aside while rolling out the dough. ⸻ 🔧 Assembling the Pie 1. Preheat oven to 400°F (200°C). 2. Roll out one disc of dough on a floured surface and place it in a 9-inch (23 cm) pie dish. 3. Add the apple filling and dot with the 2 tbsp of butter. 4. Roll out the second disc of dough and place over the filling. Trim excess dough, crimp edges, and cut small slits on top to vent (or make a lattice crust). 5. Optional: Brush with egg wash (1 egg + 1 tbsp milk or water) and sprinkle with sugar. ⸻ ⏲️ Baking 1. Bake at 400°F (200°C) for 20 minutes. 2. Reduce the temperature to 350°F (175°C) and bake for another 35–40 minutes, until the crust is golden and the filling is bubbling. 3. Cool for at least 2 hours before slicing.
