The World’s 50 Best Restaurants list named Central as the best restaurant in the world in 2023. The head chef is Virgilio Martínez. Virglio opened Central in 2008 with his wife Pia who is also head chef. I traveled to Peru (Lima) to visit this restaurant and learn about Peruvian culture.
