Heat oil in a pan or kadai over medium heat. Add mustard seeds and let them splutter. 2. Add cumin seeds, dry red chilies, asafoetida, and curry leaves. Sauté for a few seconds until aromatic. 3. Add sliced onions and green chilies. Sauté until the onions turn translucent. 4. Add chopped tomatoes and cook until they turn mushy. 5. Add diced pumpkin pieces to the pan and mix well. 6. Add turmeric powder, red chili powder, coriander powder, and salt. Mix the spices with the pumpkin. 7. Pour water into the pan, cover it, and let it cook on medium heat until the pumpkin is tender. Stir occasionally. 8. Once the pumpkin is cooked and softened, add tamarind pulp and mix it well. Let it simmer for a few more minutes. 9. Check for seasoning and adjust salt or spices if needed.
