As with all dutch oven recipes this is great for cooking in the backyard on a hot summer day, camping, or any time you crave it. Here are some of the notes: Butter (to apply to the inside of the dutch oven) 1 cup cottage cheese (not low fat cottage cheese...get the real stuff) 2 cups whole milk 1 tsp dry mustard Cayenne (pinch...or two... depending on your preference) Grated nutmeg (pinch) Salt (1/2 tsp or season to taste) Pepper (1/4 tsp or season to taste) Extra Sharp grated cheese (1 pound) Elbow Pasta (1/2 lb, uncooked) Butter inside of dutch oven In blender puree the cottage cheese, milk, mustard, cayenne, nutmeg, salt & pepper Grate cheese, but reserve some for topping In dutch oven combine the uncooked pasta, milk mixture, and cheese...stir it up Cook in dutch oven 30 minutes (about 375 degrees - for example...in 12" oven use about 18 coals on top and 9 underneath) After 30 minutes, stir slightly and add the remaining cheese on top, can also add some additional butter to drop on top...cook another 20 minutes or so, until the top is starting to brown or after tasting/testing to see if the pasta is done Remove oven from coals and let cool Enjoy!
