On this episode of Eating with Andy I’m going to teach you how to make THE BEST Lime Pie ever! It’s so easy and delicious. It has a buttery and crumbly biscuit base, with a sweet and tangy lime filling and a marshmallow swiss meringue topping. It’s smooth and the perfect balance between sweet and tangy! INGREDIENTS (serves 12) Biscuit base 250g Marie cookies 150g unsalted butter, melted ½ tsp salt Lime Filling 180ml or ¾ cup lime juice 2 x 396g cans condensed milk 6 egg yolks Swiss Meringue 6 egg whites 360g caster sugar METHOD 1) For the biscuit base. Preheat your oven to 160C. Process your biscuits with the salt until fine. You can use any biscuit you like. I like using Marie’s in this recipe. Once they’re really fine, add the melted butter and process until it’s all mixed through. Place the biscuits in a pie mould and press down using your fingers first. Then us the bottom of a glass to even it all out. Bake for 10 minutes until lightly golden. Let it cool down completely. 2) For our lime filling. Mix the lime juice with the condensed milk. Quickly mix the egg yolks one at a time. Pour into the biscuit base and bake for 20 minutes. 3) Let the pie cool down in the fridge for at least 2 hours. 4) For the swiss meringue. Put the egg whites and sugar in a bowl on a bain marie. Stir with a whisk until you can’t feel any sugar crystals. Rub it between your fingers to check. Transfer into a mixer with the whisk attachment and beat on high until it’s cool to the touch and is thick and glossy. 5) Spread the meringue all over the top and create swirls using a palette knife or the back of a spoon. For our golden top, use a blowtorch or put in an oven at 200C on grill for a couple of minutes until lightly golden. TIPS Let your biscuit base cool down completely before adding the filling. If you add the filling while the base is still warm then it will become soggy because it will start absorbing it.
