Combine the ground flaxseeds, mashed banana, coconut sugar and melted coconut oil in a bowl. Whisk until uniform. 2. In another bowl, whisk together the oat flour, brown rice flour, and tapioca flour. 3. Add the wet ingredients to the dry and stir until you get a uniform, soft dough. 4. Preheat oven to 350F/180C. 5. Divide the dough into 4 pieces and set aside 1/4 of the dough for the topping. Roll the rest of the dough out between two sheets of parchment paper, then transfer to a 23 cm (or 9-inch) pie dish. Using your hands, press the dough evenly into the bottom and sides of the dish (you can use a glass to flatten the bottom). Prick the dough a few times with a fork. Refrigerate until needed. 6. Roll out the remaining dough and cut out shapes using a cookie cutter. I cut it into long strips for the lattice. Refrigerate until needed. 7. To make the filling, first clean the rhubarb and peal it. Then cut it into cubes and combine it with maple syrup/honey, tapioca starch and lemon juice in a large saucepan. Bring the heat to medium-high and cook, stirring often, until you get a very thick mixture. 8. Transfer the filling into the prepared crust and arrange the dough cut-outs on top.
