Okra and sweet potatoes cooked in a Moroccan Tagine pot is very healthy and nutritive meal. Both okra and sweet potatoes have a lot of vitamins and minerals. They can help with diabetes, high blood pressure and digestive problems. They protect our body against kidney disease and cancer, reduce asthma symptoms, boost the immune system, regulate cholesterol levels. They are good for eyes and brain. Ingredients: Okra 300g Sweet potatoes - 350g Carrot 1 small Onion 1 medium Tomato 1 medium Crushed garlic 1 tsp Lemon 2 slices Olive oil 50 ml Cilantro 4 stalks Cumin powder 1 tsp Corriander powder 1 tsp Ginger powder 1 tsp Paprika powder 1tsp Turmeric 1 tsp Black pepper 1 tsp Salt 1 tsp Water 6 tbsp Instructions: Combine all the spices and salt with water and mix well. Put tagine on medium flame, pour olive oil, add onions, mix and cover for two minutes. Add garlic mix and cover for another 2 minutes. Then add tomatoes and one tbsp of spices mix. Mix well and cover for 2 minutes. Add okra on top of tomatoes, then make another layer with sweet potatoes and carrot. Put lemon slices and cilantro on top. Reduce flame to low and cook until sweet potatoes softens. Pour the bottom sauce on the top of vegetables during the cooking. Enjoy!!!
