FREE VEGAN TRAVEL GUIDES steller.pxf.io/5g4vJo (copy paste into browser) Where I get my Pantry Staples (Use code RATEDVFOOD) for 10% off https://countrylifefoods.com/RATEDVFOOD RECIPE Tofu 8-12 oz pre-fried tofu (can be found at Asian markets) OR Extra Firm Tofu, Drained and Pressed Dry Oil for deep frying Sauce 4 Ripe Roma tomatoes medium size, cut into 4ths or 6ths 1 Shallot minced or 1/4 of an onion 2-3 cloves of garlic minced 1 Tbsp tomato paste 1 tsp vegan chicken seasoning2 Tsp VEGAN Fish Sauce (optional)1 tsp salt1 Tbs sugar1/2 Cup water Garnish2 stems of green onions finely sliced Instructions: If using Extra Firm Tofu, make sure it’s drained and patted dry, cut into 1/2” squares. Fry the tofu in hot oil, a few at a time until golden brown. It should only be a few minutes each. Remove the fried ones to plate with paper towel to drain excess oil. Continue frying the rest until they're all fried. Tomato Sauce Slice the tomatoes into quarters, about 4-8 pieces per tomato. It will help them cook quicker and the juices will come out more that way. In a medium sized pot, add all the sauce ingredients: vegan chicken seasoning, sugar, salt, vegan fish sauce if using. I like using the Nature’s Charm Brand. Bring to a boil on high heat, then lower to simmer, cover for about 10 minutes, or until tomatoes are cooked through and the liquid reaches your desired consistency. All the tomatoes should cook down. Adjust seasoning if needed.
