Old Fashion Rye Artisan Bread Enamel Dutch oven 7qt or 10” Dutch oven Ingredients: 1. 1 3/4 cups all-purpose white flour (extra for dusting) 2. 1 ¾ cups Rye flour 3. 2 1/4 t instant yeast 4. ½ t salt 5. ½ cup molasses 6. 1 ½ cups warm water 7. 2T butter 8. 1t Caraway seeds Directions: In a large bowl mix together flour, yeast, salt, and Caraway seeds. In a small bowl mix warm water, Molasses, and butter. Pour this into the flour mixture stir together well. The dough will be sticky. Next let the dough sit in the bowl covered for 1 ½ hours to rise or until it has doubled in size. Generously flour a clean surface, place the dough on the surface and knead 6-8 times. Line your Dutch oven with parchment paper. Then place the dough in the Dutch oven. With a sharp knife make a cross on top about 1/8” deep. Put the lid on and set in a warm place to rise for another 1 ½ hours or until the dough doubles in size. Preheat your oven to 425 degrees. Then place the Dutch oven on the middle rack to bake for 30 minutes. Take the lid off and bake for an additional 10 minutes or until the crust is a golden brown. Remove from the oven and place the bread on a cooling rack. At this time, you can brush the top with melted butter. Let cool then slice and Enjoy!!
