I decided to fill them with a mixture rich in breadcrumbs, finely chopped garlic, fresh parsley, eggs and a generous sprinkling of pecorino cheese. All this is then slowly cooked in a homemade tomato sauce, which with its sweet and slightly acidic flavor is a perfect contrast to the flavor of the mussels. But it doesn't end here! To make everything even more special, I chose to accompany these mussels stuffed with tomato sauce with a glass of "12 e Mezzo", a Rosato del Salento from Varvaglione, which with its freshness and fruity notes is able to further enhance the flavors of the sea. This seafood second course is not only an explosion of taste, but it is also a way to travel with the mind and the palate, directly towards the sunny coasts of Puglia. It is proof that Italian cuisine is full of surprising dishes full of history. Preparing Apulian-style stuffed mussels may seem complex, but I assure you that with a little patience and the right ingredients, you can bring to the table a dish that will amaze all your guests. Remember: the quality of the ingredients is fundamental, so always choose fresh mussels and first choice ingredients.
