Hello my beautiful LCHF family 💙 Welcome back to Shivani’s LCHF Kitchen. Today I am sharing something very special… A super creamy, soft, homemade LCHF Cream Cheese No lemon. No vinegar. And completely low carb! Yes… we are making cream cheese using whey. And trust me, this method makes it extra creamy and soft. So let’s begin! First, let’s talk about the ingredients. You will need: • 1 liter full-fat milk • 1/3 cup hung curd • 2 tablespoons full cream • 1 tablespoon butter • Salt to taste That’s it. Simple, real ingredients. No preservatives. No additives. Step one — we need to make hung curd. You can use a hung curd maker Or you can use a traditional cheese cloth. The purpose is simple — we need thick, properly dehydrated hung curd. Let the whey drip out completely. And please don’t throw that whey away. We will use this whey to make paneer. I am not using lemon or vinegar today. When we make paneer using whey, it becomes much softer and creamier. Now take a saucepan. Add 1 liter full-fat milk. Let it come to a boil. Once the milk starts boiling, add the collected whey slowly. You will see the milk starting to curdle. Strain it using a cheese cloth. Separate the paneer from the extra whey. Now tie the cloth and place some weight on it. We need to remove extra moisture properly. Keep it like this for about one hour. After one hour — your soft paneer is ready. Now comes the fun part! Take a blender. Break the paneer into small pieces and add it to the blender. Now add: Hung curd. Fresh cream. Butter. And salt. Blend everything until it becomes completely smooth and creamy. Don’t rush this step. Blend properly until you get that rich, silky texture. 🥑 Approx Macros (Per 1 Tablespoon -20g Approx) Calories: 70–80 kcal Fat: 7–8g Protein: 2g Net Carbs: 1g Macros are approximate and may vary slightly depending on milk fat content.
