Sugar cookie bars are one of my favorite desserts to make. They are a wonderful combination of cookie and bar all in one. Light and fluffy, and topped with a buttercream frosting and sprinkles will make you happy to eat them. The dough is so easy to make and there is no chill time. Just mix and press out into a 9 x 13 pan. Sugar Cookie Bars Ingredients 1/2 cup butter, softened 1 cup granulated sugar 1 egg 1 egg white 1 1/2 Tbsp sour cream 1 tsp vanilla extract 2 1/2 cups all-purpose flour 1/2 tsp baking powder 1/2 tsp salt Instructions Preheat oven to 375 degrees. In a mixing bowl cream together butter and sugar until pale and fluffy about 3 to 4 minutes. Stir in egg and egg white. Add sour cream and vanilla and mix until everything is blended. Add baking powder, salt, and flour and stir until well combined. Pour into a greased 9 x 13 baking pan and press out until dough is even throughout the pan. Bake for 15 to 20 minutes until toothpick inserted into the center comes out clean and edges are lightly golden. Cool completely, then frost and cut into squares. Basic Buttercream Icing Ingredients: 1 cup of room temperature butter (2 sticks) 3 1/2 to 4 cups powdered sugar 1 tbsp vanilla extract 2 tbsp heavy cream Instructions: 1. Remember to set your butter out for an hour before mixing so it has time to soften. 2. In a bowl of an electric stand mixer with a whisk attacthment, beat the butter on medium speed for a couple minutes, or until light and fluffy. 3. Gradually add in the sugar, adding the first 2 cups of sugar. Once incorporated, increase the speed and mix until well combined. 4. Add the vanilla and cream and mix well. 5. Add the additional sugar which will be a total of either 3 1/2 cups to 4 cups. 6. Whip everything for a couple minutes until thick and creamy. Strawberry Buttercream Frosting 1 cup of freeze dried strawberries that have been run through a food processor. 1 stick of butter at room temperature 4 cups of powdered sugar 1 tsp pure vanilla extract 6 Tbsp of heavy whipping cream Instructions Place room temperature butter and mix for a couple of minutes until light and creamy. Alternate powdered sugar and cream a little at a time until all is added and creamy. Then add freeze dried strawberries that have been run through a food processor (they should have a course powder like texture) and mix well. Last add the vanilla extract and give one last mix.
