FULL RECIPE BELOW STEP-BY-STEP RECIPE Ingredients 6 medium tomatoes ½ red bell pepper 1 medium onion 1 whole garlic bulb (or garlic cloves)Olive oil Salt & black pepper 1 cube butter 1 tsp red chilli powder 1 to 1½ tsp jaggery powder 5–7 basil leaves4 cups water Fresh cream (optional) Extra basil & olive oil for garnish Step-by-Step Instructions 1. Prep the Veggies Wash 6 medium tomatoes. Cut off the top “eye” part and slice each tomato in half. Cut half a red bell pepper into cubes. Cut a medium onion. Slice the top off a whole garlic bulb (or use cloves) 2. Roast Everything Arrange tomatoes (cut side up), bell pepper, onion and garlic on a baking tray. Sprinkle salt + black pepper and drizzle olive oil. Roast in a preheated oven at 200°C for 50–55 minutes, until tomatoes are nicely caramelised and slightly charred. 3. Start the Soup Base Heat a pot and melt a cube of butter. Add all the roasted veggies. Squeeze the roasted garlic into the pot. Add 1 tsp red chilli powder + 1 to 1½ tsp jaggery powder. Stir well. 4. Add Water & Blend Add freshly crushed black pepper. Pour in 4 cups of water. Turn off the stove and remove the pot. Tear 5–7 basil leaves into the soup. Blend with a hand blender until smooth and velvety. (Optional: Strain for extra creamy texture.) 5. Final Boil Place the pot back on the stove. Bring the soup to a boil. Simmer for 2–3 minutes. For thicker soup: cook a bit longer to reduce. 6. Serve Hot Pour into a bowl. Add a few drops of fresh cream. Drizzle olive oil. Garnish with basil. Enjoy with a hot cheese sandwich!
