Watch till the end for secret tips to get perfect biryani every time! 💛 🛒 Ingredients 🍗 For Marination: 1 kg Chicken (medium pieces) 1 cup Thick curd (yogurt) 2 tbsp Ginger-garlic paste 2–3 Green chilies (slit) 1 tsp Turmeric powder 1 tbsp Red chili powder 1 tbsp Coriander powder 1 tsp Garam masala Salt to taste Juice of ½ lemon ½ cup Fried onions (birista) Fresh mint leaves (handful) Fresh coriander leaves (handful) 🍚 For Rice: 500 g Basmati rice (soaked 30 mins) 2 Bay leaves 4 Cloves 3 Green cardamoms 1 Black cardamom 1 small cinnamon stick 1 tsp Shahi jeera Salt (as required) 🧈 For Layering: 2 tbsp Ghee Saffron soaked in 3 tbsp warm milk Fried onions Mint & coriander leaves 👨🍳 Step-by-Step Recipe Step 1: Marinate the Chicken In a large bowl, mix chicken with curd, ginger-garlic paste, spices, salt, lemon juice, fried onions, mint & coriander. Cover and marinate for at least 1 hour (overnight for best taste). Step 2: Cook the Rice Boil water with whole spices and salt. Add soaked basmati rice and cook till 70% done. Drain and keep aside. Step 3: Layering In a heavy-bottom pan or handi: Spread marinated chicken at the bottom. Add half-cooked rice on top. Sprinkle fried onions, mint, coriander, saffron milk & ghee. Repeat layers if needed. Step 4: Dum Cooking Seal the lid tightly (use dough if possible). Cook on low flame for 20–25 minutes. Let it rest for 10 minutes before opening.
