Slice off the top of the garlic head to expose the cloves. 2. Place on aluminum foil, season with salt and pepper, and drizzle with olive oil. 3. Wrap the foil tightly around the garlic. 4. Roast at 400°F (200°C) for about 45 minutes. 5. Remove from the oven, let cool, then mash into a paste. 2️⃣ Make the Dough 1. Warm the milk (warm, not hot). Add yeast and sugar, stir, and let sit for 15–20 minutes until foamy. 2. In a large bowl or stand mixer, combine flour and salt. 3. Add the milk mixture, egg, and softened butter. Mix until a dough forms. 4. Knead for 8–10 minutes until smooth and elastic. 5. Cover and let rise for 45–60 minutes, or until doubled in size. 3️⃣ Make the Garlic & Parsley Spread Mix together butter, roasted garlic paste, parsley, and pepper until smooth and creamy. 4️⃣ Assemble the Roll Bites 1. Roll the dough into a rectangle about 1/2 inch thick. 2. Spread the garlic butter mixture evenly over the dough and sprinkle with cheeses. 3. Cut the rectangle horizontally in half. 4. Roll each piece tightly, like cinnamon rolls. 5. Mark the dough at even intervals to guide evenly sized cuts. Cut into 1-inch rolls (kitchen string gives the cleanest cuts). 6. Place rolls in a buttered baking dish and let rise for 30–45 minutes. 5️⃣ Bake 1. Brush with egg wash (1 egg + 1 tbsp milk). 2. Bake at 400°F (200°C) for 15–20 minutes, or until golden brown. 3.
