Prawns Biryani (Easy and very delicious) Servings-6 Prawns Biryani is a delicious one-pot meal, Indian Basmati rice is cooked and layered with Prawns coconut mashed green masala cooked in fresh herbs & spices loaded with flavors Perfect Sunday brunch if you are craving for something delicious This is the recipe you must try! Ingredients (Step-1) -1kg medium prawns -Clean & Devein the prawns Wash & drain the excess water and set aside (Step-2) -2 glass India Gate Basmati Rice -2 black cardamom, 5 cloves,1 tsp fennel seeds,1 cinnamon stick, salt to taste Wash 2-3 time with water until the water runs clear and soak it filter water for 30 minutes before cooking -After 30 minutes in a deep dish add enough water, add whole garam masalas, salt to taste bring water to a rolling boil -Once water starts to boil add soaked rice and cook the rice till partially cooked (80%, when you break a grain of rice you should still feel a bite, some rawness) -Drain the water completely -Fish out while garam masala (Step-3) PREPARE GREEN MASALA -1/2 freshly grated coconut -10 green chillies -10 garlic -2” ginger -1 tsp garam masala powder -1/4 tsp turmeric powder -1 tsp coriander powder -1/2 tsp cumin powder -1/2 tsp black pepper powder -4 spring mint leaves -handful coriander leaves -1/2 lime juice -salt -Add add to a blender all ingredients add enough water form a smooth paste and set aside (Step-4) -4 medium tomato cut into cubes -2 large onions chopped -5 tbsp oil + 2 tbsp ghee -Heat oil & Ghee add whole garam masala, chopped onion stir and cook until golden & fragrance -Add the ground green masala stir for 1 minutes, then lower the heat cover and cook for 5 minutes -Once you see oil separates from the gravy add cut tomatoes give it a good mix close the lid and cook for 5 minutes or until tomatoes has softened completely -now add Prawns mix well to Coat all masala cover the lid and cook for 2 minutes -Now add boiled potatoes mix well simmer for 2 minutes -Turn off the flame let the prawns & potatoes absorb all the masala LAYERING In another deep dish -1st layer add Cooked rice spread evenly add food color -Then add cooked prawns with green masala, few fresh coriander spring, few fresh mint springs -Add Cooked rice spread evenly Add prawns with green masala -Final layer rice , food colour, fresh mint & coriander leaves. (You can drizzle more butter/ghee on the layers ) -Cover the lid , lower the flame keep the dish on a taws & cook foe 25 minutes -Steam helps infuse the rice with flavour & aroma form the prawns & green masalas -Once done switch off the flame & allow to rest for another 10 minutes -Enjoy!! Hot with cucumber, onion, tomato Rita, pickle & papad.
