Delicious Dal Khichdi This delicious Dal Khichdi one pot meal made with Rice, different types of dal, spices. protein packed with smoky tandoori flavored, super comforting that you are going to love it. (Step-1) Ingredients 1/2 cup split pigeon peas/Toor dal 2 tbsp red dal/masoor dal 2 tbsp Bengal gram/yellow dal 1 tbsp ghee 1 tsp cumin seeds 1 tsp ginger paste & garlic paste Dash turmeric powder salt to taste Dash Asafoetida Water for cooking -Wash & soak all dal’s for 30 minutes -After soaking for 30 minutes, Heat pressure cooker add soaked dal, turmeric powder, Asafetida with enough water fill up to 1” above the dal, salt mix close the lid & pressure cook until dal is cooked (3-4 whistle) -Turn off the flame allow the pressure to reduce naturally (Step-2) COOK RICE -1/1 cup Basmati Rice -salt -water for cooking -Wash & Soak rice for 30 minutes -after 30 minutes, bring water to a boil in a dish, once water start boiling add soaked rice, add salt cook until cooked Al dente (80% cooked) once the rice is cooked Strain the rice and set aside (STEP-3) -2 tbsp ghee -1 tsp cumin seeds -1 medium onion chopped +3 green chillies chopped -1 big tomato chopped -1 tsp ginger paste & garlic paste -1/2 lime juice -salt to taste -cooked dal -cooked rice SPICE POWDER -1/2 tsp Kashmiri chilli powder, dash turmeric powder,1 tsp coriander powder, 1/2 tsp fenugreek leaves toasted & powdered, 1/2 tsp dry mango powder, 1/2 tsp garam masala powder. Method -Heat oil & ghee is a wide dish, add cumin seeds allow to crackle, add chopped onion & green chilies sauté until onion turns translucent & slightly golden, add ginger & garlic paste stir and cook until raw smell goes away, -add spice powder:Kashmiri chilli powder, turmeric powder,coriander powder, fenugreek leaves toasted & powdered, dry mango powder, tsp garam masala powder. Stir and cook for 2 minute. -Now add chopped tomatoes cover and cook over medium heat until tomatoes are nice and mushy -Now add cooked dal, add more butter/ghee mix well close the lid -Now before serving add cooked rice and final seasoning -cooked rice cook for 2 minutes -adjust taste salt, spicy & consistency, if the Khichdi too thick add little warm water to adjust the consistency -FINAL SEASONING -1 tbsp ghee -1/2 tsp cumin seeds -dash Kashmiri chilli powder -3 torn dry chilies (remove seeds) -Heat ghee add cumin seeds allow crackle, turn off the flame now add red chilli powder & dry chillies Pour this tadka over the Khichdi. (This is optional) -TO GET RESTURANT STYLE The Dhungar/Coal smoking Method (Let’s Dum the Khichdi,) -Fold aluminum foil cup shape -place the foil at the center the dish -Place the coal over the gas flame with a help of tongs, when coal turns hot red, place hot coal inside the foil cup, -now pour 1 tsp ghee on the hot coal -it will begin to smoke, immediately cover the dish & allow to rest for 5 minutes -Open the lid & remove the coal, your Khichdi will now have a smoked tandoori flavor -Garnish with coriander leaves FINAL SEASONING -1 tbsp ghee -1/2 tsp cumin seeds -dash Kashmiri chilli powder -3 torn dry chilies (remove seeds) -Heat ghee add cumin seeds allow crackle, turn off the flame now add red chilli powder & dry chillies Pour this tadka over the Khichdi. -drizzle more & serve with lime wedges -Enjoy!!!
