Fatteh Salad will make a perfect appetizer for your family gathering in the upcoming days. Everyone is focused on desserts only but I think this appetizer goes very well with the red, white, and green theme for the holidays. Everything about Mediterranean cuisine is my favorite and Fatteh Salad doesn’t just look beautiful, it also tastes delicious. Every bite of this salad is wholesome, especially when you sprinkle it with the flavor bombs (pomegranates). Fatteh Salad For making Pita Bread: 3 cup all-purpose flour ½ cup whole-wheat-flour 1 tbsp sugar 2 ¼ tsp yeast 3 tbsp olive oil 1 ¼ cup warm water 1 tsp salt (We will be needing three pita breads for the recipe. Also ¼ cup olive oil for toasting pita bread pieces) For the Yogurt sauce: ½ cup sour cream 1 cup plain yogurt -¼ cup milk for adjusting the consistency of the yogurt sauce 2 tbsp tahini 1 to 2 garlic cloves- crushed salt and black pepper to taste 1 tsp sugar 1 tbsp olive oil 1 tbsp lemon juice For the chickpeas: 2 cups boiled chickpeas 2 tbsp olive oil ½ tsp cumin powder ¼ tsp paprika powder ¼ tsp Black pepper ½ lemon- juiced For Assembly: 3 pita breads sliced and pan-fried in olive oil till golden. 2 cups prepared chickpeas Prepared yogurt sauce 1 cup of pomegranate Pine nuts or pistachio nuts for garnish Some chopped chives or scallions Dissolve yeast and sugar in ¼ cup of warm water. Add sugar to it and let it foam. Add the yeast mixture to the flour, along with the oil and the remaining water, and knead. Knead it for a few minutes then add salt. Continue kneading till you have a soft and smooth pliable dough. Cover the dough and let it rise in a warm place for an hour or until doubled in size. Heat the oven to 500°F. Uncover the dough and divide it into eight equal portions. Roll into balls and spread them. Transfer two of the rolled-out dough pieces to a baking tray and place them in the oven. Bake it for 5-8 minutes. The baking time depends on the tray material. You will see that the pitas will puff up. Don’t overcook your pitas as we are not looking for their tops to turn brown. Continue baking your bread till all the dough is finished. Cut the pita into slices and lightly toast in olive oil. Layer the appetizer with the components as you see in the video. Feast Well!♥️
