Dry aged meat is a delicacy! Today at iQ Barbecue, we're cooking up this 75 day dry-aged brisket that has been drenched in umami flavor. This process gives it so much more depth than its wet counterparts for your enjoyment. Are you ready? Lets get cooking! Ingredients: 15 lb Wagyu Brisket (Snake River Farms) SPG Rub Brisket Rub SPG Rub: 1/4 cup of coarse black Pepper 1/4 kosher salt 1 tsp cup Smoked Paprika 1 tbsp Cumin 1/8 cup Granulated Garlic Brisket Rub 1/3 cup brown sugar 2 tablespoons paprika 1 tablespoon smoked paprika 2 1/2 teaspoons black pepper 1 tablespoon kosher salt 1 tablespoon garlic powder 1 tablespoon onion powder 3/4 teaspoon mustard powder 1/4 teaspoon cayenne pepper Recipe: Begin by trimming the pellicle from the brisket. Add your brisket and then your SPG rubs evenly on all sides. Preheat Big Green Egg to 350 degrees F and place brisket on upper grate for 2 hours. Mist with just water every 45 minutes. Once you reach desired color, bark and temp place in a foil pan and cover with parchment t paper and then foil. Place back on the BGE for an addition hour or until probe tends in the point section. Remove and allow to rest for at least 2 hours (4 hours preferably).
