If you have a sweet tooth, but want to be healthier - these recipes are for you! These recipes are all gluten-free and refined sugar-free too! They're made using super simple ingredients that you probably already have in your kitchen and I can't wait for you to try them! ENJOYYY LOVELIES! #1 EASY & HEALTHY SINGLE-SERVE CARROT CAKE 1 Egg ½ tbsp Liquid Sweetener 3 tbsp Milk of choice 50g Oat Flour (or blended oats) 1 tsp Baking Powder ½ tsp Ground Cinnamon ¼ tsp Ginger 1 small Carrrot (60g–ish) finely grated For the frosting: 30g Cream Cheese 60g Thick Yoghurt ½ tbsp Liquid Sweetener Walnuts (optional) 1. Preheat oven to 180°C / 350°F / 160°C fan. 2. Whisk egg, liquid sweetener and milk until combined. 3. Add in dry ingredients and carrot and fold until combined. You can also fold in some raisins if you like! 4. Transfer into a small (greased) cake tin or oven-safe bowl (min is 15cm) and bake for 15 minutes. 5. Combine cream cheese, yoghurt and sweetener then spread this onto your baked cake and top with chopped walnuts. #2 EASY & HEALTHY SINGLE-SERVE TIRAMISU 60g Oat Flour 1 tsp Baking Powder 1/2 tbsp Liquid Sweetener 1/4 cup Milk 1/4 cup Black Coffee For the filling: 30g Cream Cheese 60g Thick Yoghurt ½ tbsp Liquid Sweetener Cocoa Powder for dusting 1. Preheat oven to 180°C / 350°F / 160°C fan and prepare a loaf tin with baking parchment paper. 2. Combine the Oat Flour, Baking Powder, Syrup and Milk in a small mixing bowl. 3. Transfer the mixture into the loaf tin. Bake for 10 minutes. 4. Combine the filling ingredients and mix until smooth. 5. Once baked, pour the coffee over the cake and leave to soak for about a minute. Carefully remove the cake from the tin. 6. Slice the cake into 3 pieces, layering the filling inbetween. 7. Dust with cocoa powder. #3 EASY & HEALTHY SINGLE SERVE CHOCOLATE CHEESECAKE 30g Oats 1 Banana 60g Cream Cheese 60g Thick Yoghurt 20g Cocoa Powder 1 tbsp Liquid Sweetener 1. Add 60g of your banana to a bowl and mash it - save any leftover banana for later. Add oats and mix. 2. In a separate bowl, add cream cheese, yoghurt, sweetener and cocoa to a bowl and mix until smooth. 3. Cut the leftover banana into small pieces and mix this in. 4. Press the oat mixture into the bottom of a springform cake tin OR into an oven-safe ramekin/bowl. 5. Add the cheesecake mixture on top. 6. Cover and refrigerate for at least 3 hours. NOTES: You can make your own oat flour by blending oats into a fine powder. When I say "Liquid Sweetener" this is maple syrup, agave, honey etc. An alternative to the cream cheese frosting in the carrot cake & tiramisu use this recipe: 80 g Thick Yoghurt dairy-free 1 tbsp Vanilla Protein Powder Try to use a thick yoghurt like Greek-style or coconut yoghurt!
