Welcome to my happily ordinary life here in Helsinki, Finland. Today Is a kitchen restock kind of day. I also make (not-so-crispy) tofu with air fryer veggies, clean up a little bit and restart knitting a beanie I already had finished, but then realized it was too big... I finish the day with some home made Joulutortut (Finnish Christmas Tarts) and Glögi (A kind of Nordic version of mulled wine) and start a christmas puzzle that I got for a Christmas present a few years back from my nephews. Cut the tofu into and cut to about 1 cm thickness. Wipe with kitchen paper, then cover with potato starch. 2. Mix the sauce ingredients together. 3. Fry tofu in vegetable oil in medium heat until golden brown, reduce heat and add the sauce. Cook until sauce has caramelized. 4. Finally, add sesame seeds to taste. Joulutortut: 1 pack frozen puff pastry Baking-safe plum jam/marmalade Powdered sugar 1. Spread the pastry sheets on a baking sheet lined with baking paper and let them thaw for about 15 minutes. Cut the sheets into squares and make diagonal cuts in the corners of the squares towards the center of the tart (halfway between). Place a spoonful of oven-safe jam/marmalade in the center of each Christmas tart. Lift every other corner up and pinch them in the middle, pressing them down with moistened fingers. 2. Bake the Christmas tarts on the middle rack of a 225-degree oven for about 10-15 minutes. Sift a little icing sugar on top. Star tarts are at their best when freshly baked.
