Hi, everyone! Today we're going to show you how to make the classic cake in Japan: Japanese Strawberry Shortcake. (ショートケーキ, いちごのショートケーキ). Strawberry shortcake, aka Japanese Christmas cake or birthday cake, is one of the most popular and classic cakes in Japan. It’s made of 2-3 layers of sponge cake, with fresh strawberries, whipped cream filling, and whipped cream frosting. It’s simple but delicious, so people enjoy it all year around. Usually, strawberry cake is made of genoise cake, but for the best texture (more moist, soft and light ), we changed it to soufflé sponge cake which is usually used to make cake rolls. Line the pan with baking paper, the baking paper should be 2 cm higher than the baking pan 2. Pour the hot water into the bowl, place the small bowl with butter into the water to melt the butter. 3. Prepare 4 egg whites and 5 egg yolks in two different large bowls. 4. Add 10g of sugar into the egg yolk, Whisk the yolks until pale and thick. Set aside. 5. Beat the egg whites on medium speed for 1 minute, then add the sugar one-third at a time, beating 30 seconds before adding the next. After adding the rest of sugar, continue beating until a very soft firm texture. 6. Add the yolks into the meringue and mix until well combined. 7. Sift the flour, mix well until fully incorporated. 8. Pour the warm melted butter slowly, gently fold the batter until well combined. 9. Pour batter into a lined cake pan, spread out the batter evenly. 10. Preheat the oven to 200°C, and bake for 12~14 minutes. 11. Once baked, transfer the cake out of the pan, remove the parchment paper from four sides of cake. and let cool completely. 12. Wash the strawberries. We need five strawberries for top decoration, just cut off the stem and put them on towel paper to absorb excess water. Then cut the rest of the strawberries into small pieces. 13. When the cake is totally cool, Place a piece of new parchment paper on top of the cake, flip the cake over and remove the baking paper very carefully. Then flip the cake over again and cut the cake into 6x7 cm pieces, you will get 16 pieces of small cake. 14. Add the powdered sugar into the whipping cream and beat until very soft peaks. 15. Assembly. Spread the cream evenly, don't need to put too much cream at this point then add the strawberry pieces, and spread the whipped cream again. Cover with another cake layer. Keep repeating until you have three cake layers. 16. Frost the top and sides of the cake with whipped cream, and decorate with a whole strawberry on top, dust with powdered sugar if needed. Serve and enjoy.
