Recipe below 👇🏾 Today started with a simple grocery run and ended in the kitchen making a warm, comforting bowl with roasted sweet potatoes, spinach, sun-dried tomatoes, and rice. Lately I've been focusing more on simple meals and ingredients that feel nourishing and supportive for gut health. Sweet Potato, Spinach & Rice Bowl A simple and nourishing meal. Ingredients 1 sweet potato, cut into medium–large cubes 1 cup white rice 1½ cups water 1 handful fresh spinach 1 tbsp sun-dried tomatoes 1 tbsp minced garlic 2 tbsp grapeseed oil (divided) Seasonings for the sweet potatoes 1 tsp salt 1½ tsp black pepper ½ tsp paprika 1½ tsp garlic salt Instructions 1. Roast the sweet potatoes Preheat the oven to 425°F (218°C). Place the cubed sweet potatoes on a baking tray or aluminum rack. Drizzle with 1 tbsp grapeseed oil. Add salt, pepper, paprika, and garlic salt. Toss until the potatoes are evenly coated. Roast for 30 minutes, turning halfway through (15 minutes on each side). 2. Cook the rice Bring 1½ cups of water to a boil in a pot. Add 1 cup white rice. Reduce the heat to low, cover, and cook for about 10 minutes or until the rice is tender. 3. Sauté the spinach Heat 1 tbsp grapeseed oil in a pan over medium heat. Add 1 tbsp minced garlic and cook until lightly golden and fragrant. Add the spinach and sauté until it begins to wilt. Stir in the sun-dried tomatoes and warm them through. 4. Assemble the bowl Add rice to your bowl, top with the roasted sweet potatoes, and finish with the sautéed spinach and sun-dried tomatoes.
