Made with simple ingredients like ripe bananas, olive oil, cinnamon, and vanilla, this homemade banana bread stays moist for days. Ingredients: 1 ¾ (210g) all-purpose flour 2 tsp (9g) baking powder ½ tsp (2g) baking soda ¼ tsp (1g) salt ⅔ (133g) granulated sugar 2 (100g) large eggs, room temperature 1 tsp (5g) pure vanilla extract ½ tsp ground cinnamon 90 mL/ grams extra light olive oil or 113g unsalted butter, melted and cooled 3 tbsp (45g) milk, room temperature 1 cup (230g) mashed ripe bananas Chopped walnuts for topping (optional) Instructions: Preheat to 350°F (175°C). Grease the pan 9×5×3” or line with parchment paper. 1. In a bowl, whisk flour, baking powder, baking soda, and salt. Set aside: 2. In another large bowl, whisk eggs, sugar, vanilla extract, and cinnamon until slightly fluffy (about 1 min). Gradually whisk in olive oil and milk. Fold in mashed bananas until combined. 3. Gently fold the dry ingredients into the wet mixture just until combined. Avoid overmixing — the batter should be slightly lumpy. 4. Pour batter into the prepared 9×5×3” pan.
