Braised Beef Short Ribs: 2 to 3 pounds beef short ribs 2 tablespoons canola oil or whatever you prefer Salt and pepper to season all sides 2 to 3 carrots, sliced fairly thin 2 to 3 celery stalks, sliced fairly thin 1 medium onion coarsely chopped 2 cloves garlic, minced 2 tablespoons tomato paste 3/4 cup dry red wine (I used Pinot Noir) 1 1/2 to 2 cups beef broth 1 to 2 bay leaves Directions: 1. Preheat oven to 300 degrees F 2.. Season short ribs liberally on all sides with salt and pepper. 3. Pour oil into oven safe Dutch oven or pan with deep sides. Sear ribs on all sides (they will smoke but that's okay). 4. Once searing is done transfer to a plate and set aside. Pour excess oil out of the pan. 5. Add carrots, celery, and onion to the pan and cook for about 5 minutes until onions are translucent and carrots have begun to soften. 6. Add tomato paste and garlic and cook 1 more minute. 7. Add wine and deglaze the pan. Let simmer 3 to 4 minutes to reduce. 8. Add beef broth and browned short ribs. Liquid should cover about 2/3 of the ribs. 9. Bake in preheated oven for 2 1/2 to 3 hours (it took 2 1/2 in my oven). 10. If sauce is too thin, strain the sauce into a sauce pan and simmer to reduce by half. (I didn't have to do this step, the sauce reduced during the baking process). 11. Enjoy over mashed potatoes.
