Le Fraisier is a classic French cake made with fresh strawberries. Its name comes from the French word "Fraises" which means "Strawberries". Delicate génoise cake layers, the abundance of fresh strawberries and the luscious mousseline vanilla cream... no wonder why Le Fraisier is France's favorite summertime dessert! Ingredients For the génoise sponge cake 4 eggs 120 g / ½ cup + 1 tbsp sugar 100 g / 1 cup, minus 1 tbsp cake or regular flour 25 g / 2 tbsp cornstarch 2 tbsp butter, melted and cooled For the mousseline vanilla cream 525 ml / 2¼ cups milk 5 large egg yolks 150 g / ¾ cup sugar 60 g / 5 tbsp cornstarch 3 tbsp best quality vanilla (sugar or extract) 250 g / 1 cup + 2 tbsp butter at room temperature Soaking syrup 80 ml / ⅓ cup boiled water (or bottled water) 3 tbsp elderflower syrup (or similar ideally colorless syrup) To assemble the strawberries 500 g / 1.2 lbs ripe strawberries (or more!)
