Strawberry cream buns are made gently and slowly Light, fluffy, and comforting. 🍓 Strawberry-Only Cream Buns Ingredients For the Dough-- 1/2 cup (90–100 g) strawberries 1 + 1/2 tbsp (20 g) sugar 2 tbsp (30 g) milk 1/2 tsp active dry yeast 1 cup + 2 tbsp (135 g) all-purpose flour Pinch of salt 1 tbsp (15 g) butter, melted Note: Using strawberries gives a slightly different flavour — sweeter and less tart than a mixed-berry blend, but just as lovely. If using frozen, thaw them first or microwave to release juices. Cream Cheese Filling--- 1/3 cup (75 g) cream cheese, softened 2 tbsp (30 g) heavy cream 1/4 cup (60 g) condensed milk 1/2 tsp vanilla extract 1/2 tbsp (5 g) custard powder To Top--- Strawberries (fresh slices or halved pieces) Powdered sugar dusting (optional) Instructions- 1. Activate the Yeast with Strawberry Juice (Place the chopped strawberries and sugar in a microwave-safe bowl.) Microwave for ~60 seconds until the strawberries release their juices. Mash lightly, add the milk, then sprinkle the active dry yeast over it. Cover and let it sit ~10 minutes until bubbly; this activates the yeast. 2. Make the Dough- In a mixing bowl, combine the flour and salt. Pour in the strawberry-yeast mixture. Stir with a fork until you get a shaggy dough. Turn the dough onto a clean surface and knead ~for 5–6 minutes until almost smooth. Add the melted butter and keep kneading until the dough is smooth and elastic. Place in a greased bowl, cover with cling film, and let rise in a warm spot for 2–2½ hours, until doubled. 3. Shape & Second Rise Once risen, punch the dough down gently. Divide into 4 pieces; shape into balls and flatten slightly. Place on a parchment-lined tray, cover, and let rise another 45 minutes until puffy. 4. Prepare the Strawberry Cream In a bowl, whisk the softened cream cheese and heavy cream until smooth. Add condensed milk, vanilla extract, and sifted custard powder. Mix until combined. The filling should be thick but pourable. 5. Fill & Top- After the second rise, press down the centre of each bun with the bottom of a glass to make a well. Brush each bun lightly with a mix of milk + melted butter. Pour in the cream filling. Top with sliced or halved fresh strawberries. 6. Bake- Preheat your oven to 180 °C (356 °F). Bake for 20–25 minutes until buns are golden and filling is set. 7. Cool & Serve- Let them cool slightly, then dust with powdered sugar.
