So many people have asked me to do a video on sugars and ice cream, so this is where I am going to start. It's a broad subject and will take a while to get through the ones you should use, followed by the ones you could use. Sucrose is the obvious place to start, with it's baseline PAC & POD of 100, it is the GOAT of sugars. You can make amazing ice cream if you only add sucrose, but a lot of people like different sweetness level.
